The Melting Pot

Tony Genovese submitted this month’s recipe for the New England Lobster Roll and homemade chips.
Ingredients:
1/2 pound steamed lobster meat (meat from 2, 1.25lb lobsters)
1/4 cup mayonnaise
Juice from 1/2 lemon, lemon wedges for garnish
Kosher salt and white pepper to taste
1 scallion chopped fine
1 stalk celery (green part only) fine dice
3 Boston style hot dog buns
2 tbsp butter
Pick through lobster meat to remove all shells. Combine mayonnaise, lemon juice, celery, salt and pepper and fold into lobster meat. Let mixture stand in the refrigerator for 20 minutes to meld the flavors.
Heat a cast iron pan and add 1 tbsp butter and melt until frothy. Add buns and toast 1 side until golden. Add 2nd tbsp butter and flip buns over to toast other side.
Fill buns and garnish with lemon wedges and additional scallions. Serve with homemade chips.
Makes 2-3 rolls.
Ingredients:
3 medium Idaho potatoes, scrubbed
Kosher salt and fresh cracked pepper to taste
4 cups peanut oil for frying
Slice potatoes on a mandoline approximately 1/8 in thick. Fry in 350 to 375 degree oil. Drain on paper towels and toss with salt and pepper immediately. Serve warm.
