The Melting Pot

Tony Genovese

Tony Genovese submitted this month’s recipe for the New England Lobster Roll and homemade chips.

Ingredients:
1/2 pound steamed lobster meat (meat from 2, 1.25lb lobsters)
1/4 cup mayonnaise
Juice from 1/2 lemon, lemon wedges for garnish
Kosher salt and white pepper to taste
1 scallion chopped fine
1 stalk celery (green part only) fine dice
3 Boston style hot dog buns
2 tbsp butter

Pick through lobster meat to remove all shells. Combine mayonnaise, lemon juice, celery, salt and pepper and fold into lobster meat. Let mixture stand in the refrigerator for 20 minutes to meld the flavors. Heat a cast iron pan and add 1 tbsp butter and melt until frothy. Add buns and toast 1 side until golden. Add 2nd tbsp butter and flip buns over to toast other side. Fill buns and garnish with lemon wedges and additional scallions. Serve with homemade chips. Makes 2-3 rolls.

Ingredients:
3 medium Idaho potatoes, scrubbed
Kosher salt and fresh cracked pepper to taste
4 cups peanut oil for frying

Slice potatoes on a mandoline approximately 1/8 in thick. Fry in 350 to 375 degree oil. Drain on paper towels and toss with salt and pepper immediately. Serve warm.

This recipe is brought to you by Tony Genovese, a true New Englander and lobster lover. Born and raised in Boston, Tony has been a lover of lobster since he was a young boy. As the resident chef in his household, he enjoys cooking for his wife and two kids. Tony moved to Hilton Head 10 years ago and has been everything from bartender to chef to pool salesman and for the last 5 years, partner owner of Reno Pro Inc., a renovation company on Hilton Head Island (www.renopro.net). You can meet one of Tony’s other partners for Reno Pro, Chad Perrine, behind the bar at Street Meet. Enjoy this Boston classic and GO RED SOX!

Yes, this really happened! golden dawn

The 1942 Ohio State National Champions did not receive rings until 2002. While at YSU, Ohio State coach Jim Trussell was told by Carmine Naples, owner of The Golden Dawn Restaurant and member of the 1942 Championship team, that he didn’t receive a ring because of World War II. Coach Trussell promised that if he were to ever win one at Ohio State, he would give a ring to every member of the ’42 team. In 2002, after winning the NCAA National Championship, Coach Trussell made good on that promise and Carmine Naples and all living members of the 1942 National Championship team received their rings.
